How long have you been in seafood?
My whole life. I started working with dad when I was 14. He was a truck driver and a mate of his said why don’t you go to Lakes Entrance and pick up some fish for us and bring it to us and we will sell it. It was a joke and the joke turned into reality. Dad started in the business of buying and selling fish. I love the industry, it’s in my DNA. It’s hard work but I wouldn’t do anything else.
What are your favourite fish?
My favourite fish are King Dory, Bass Grouper and Silver Whiting. I like to deep-fry the Silver Whiting, pan-fry the King Dory with a little butter and the Bass Grouper, I like that on the barbie. Bass Grouper comes out of NZ and local waters and it’s easier to find from August onwards.
