Four years after rebirth, Melbourne Seafood Centre keeps the tradition alive

It's 4am, there isn't even a hint of dawn in the dark sky, and there are already dozens of small trucks lined up on Kensington Road waiting for the Melbourne Seafood Centre to open up.

The roller doors might be closed, but inside there are workers moving fast in their gum boots and white uniforms, stacking ice-filled crates with every variety of seafood available across Victoria, or further afield.

They have to move fast, because at 4:30am, the doors will open and buyers from across Melbourne and the state will pour in.
